A few years ago the hubster and I spent a while living in San Jose, California. Whilst out there I fell in love: With the people, with the weather, with the lemon tree in our garden, with the big cars, with the ‘can do’ attitude, but most of all with the soup. Yes, soup. Vietnamese chicken noodle soup. Pho Ga.
Pho (pronounced ‘ph’ as if the ‘o’ isn’t there), is an old peasant staple using simple aromatics, rice noodles and chicken or beef to create a comforting meal, often eaten for breakfast. It is truly delicious and something I often crave, so imagine my delight when I found some kits in Waitrose. Easy, quick Pho fix = happy day.
